Rosemary Honey

Rosemary is an aromatic, evergreen shrub that has leaves similar to pine needles, native to the Mediterranean region.
The plant flowers in spring and summer in temperate climates but the plant can be in constant bloom in warm climates. The flowers are white, pink, purple or deep blue.
Rosemary contains the antioxidants carnosic acid and roemarinic acid, and other bioactive compounds including camphor, caffeic acid, ursolic acid, betulinic acid, rosemaridiphenol and romanol. Some of these may be useful in preventing or treating cancers, strokes and Alzheimer's desease.
Rosemary honey has a very light colour that is almost white when crystallized. It has a floral, not too intense, very delicate aroma, sometimes accompanied by a camphor note. The taste is not too sweet with slight acic notes.

Try the honey with your favourite Mediterranean marinade or with fish!
